Shawarma is a Middle Eastern-style sandwich usually composed of shaved lamb, beef, or chicken. but has become popular with the Nigerian public over the years thanks to our young girls who want a taste of it even if they have never had it before. It is not entirely their fault though as Shawarma is a meal that is filling and also nourishing. It is also irresistible if done well. The classic shawarma combination is pita bread, hummus, tomato & cucumber, tahini sauce and of course the shawarma.

1 cup plain yogurt
1/4 cup vinegar
2 cloves garlic, crushed
1 teaspoon pepper
1/2 teaspoon salt
2 cardamom pods
1 teaspoon allspice
juice from 1 lemon

FOR THE SAUCE:
1 cup tahini
2 cloves garlic, crushed
1/4 cup lemon juice
2 tablespoons yogurt
___________________________
PITA FILLINGS:
8 loaves of pita bread or 4 large
thinly sliced cucumbers
thinly sliced onions
1/2 teaspoon sumac
thinly sliced tomatoes
1/2 cup fresh parsley, finely chopped
pickle slices (optional)


Directions
In a large bowl mix first 13 ingredients and marinate for 4 hours or overnight. Place in 2 inch pan and cover with aluminum foil, place in 400 degree preheated oven for 40 minutes. Pour off excess liquid and remove foil, cook in oven for an additional 20 minutes. Serve with pita bread, tahini sauce and rice and pickles. Or make a shawarma sandwich (see video)
